This is fragrant, fresh and full of the original fruitiness of the wine. The wood aging, mainly in small barrels, has smoothed the wine out while leaving a hint of toastiness. At the end, the acidity is both delicious and refreshing.
You can serve this chilled or at room temperature, before or after a meal. It pairs particularly well with hard, nutty cheese or a deserts such as apple pie, tarte tatin, baked figs, orange tart, (leave the peel on some of the orange) caramel tart, or cooked strawberries with pepper. Think creme brulee, honey and almond cake and cheeses such as Parmesan and Manchego. Serve it in place of a Sauternes or Gewurztraminer with a delicate foie gras and brioche. The acidity cuts perfectly through the richness of the paté.
